Choc-raspberry brownie balls

Not joking: these are the most awesome treat you can make for a party or gathering. They are moist, sweet, bite-sized, and so, so, delicious.

The raspberry cuts through the chocolate in such a bright and berryish way, and the thick outer shell of chocolate hits that sweet-tooth-satisfying spot perfectly.

Choc-raspberry brownie balls

 

Ingredients:
  • 250g butter
  • 250g dark chocolate
  • 1 tbsp vanilla
  • 4 eggs
  • 2 cups caster sugar
  • 2 cups plain flour
  • 4 tbsp self raising flour
  • 1 1/2 cups raspberries (either fresh, or frozen ones that you have thawed)
  • 600g milk chocolate
  • 200g white chocoloate
  • 3-5 drops pink food colouring

 

 

Method:
  1. Preheat oven to 160ºc, and line two small baking trays with greaseproof paper.
  2. Melt butter, dark chocolate, and vanilla in a small saucepan over a very low heat. Stir periodically until ingredients are fully melted and well combined.
  3. In a large mixing bowl, beat eggs and sugar until thick and creamy.
  4. Pour in melted choc-butter mixture, stirring constantly until thoroughly combined.
  5. Fold in flour.
  6. Divide batter evenly between baking trays.
  7. Bake brownies for 25-30 mins, then remove from oven and allow to cool completely.
  8. Once cooled, break brownies up in a large mixing bowl with your hands.
  9. Add raspberries, then squeeze and squelch together until you have what is essentially a brownie-raspberry mud.choc raspberry brownie balls 02
  10. Roll tablespoonfuls of mixture into balls, then chill for an hour until they firm up.
  11. Melt your milk chocolate in a bain marie, and then dip each ball in chocolate, and roll around until thoroughly coated.
  12. Set these on a tray, or in small chocolatiers patty pans and allow to set.
  13. Once the milk chocolate has set, melt white chocolate with pink food colouring in the same manner. Spoon this into a piping bag, snip off the smallest corner, and drizzle pink chocolate in streaks over your brownie balls.
  14. Chill and serve.

As you can see, these are a little more labour intensive than most of my recipes, but when you make them you will see that it’s worth it.
